What is one-vs-one?
One-vs-one: A strategy for many-class problems that trains a binary classifier for every pair of classes, then lets the pairwise models vote. It needs k(k-1)/2 models for k classes but each trains on a small slice of data, which suits algorithms that scale badly with data size.
One-vs-one: an example
With 5 classes you train 10 pairwise models; the class that wins the most votes is predicted.
